Intense mushroom broth a sous vide – a great basis for soups
Ingredients
  • 500g of different variety of mushrooms
  • 6-12 Asparagus
  • 1 garlic clove
  • 1/2 litre of water
  • 2 pinches of sea salt
Instructions
  1. Heat the sous vide to 85C (185F)
  2. Cut the mushrooms in quarters or cubes and fill them in a sealed pouch.[br]
  3. Blanch aspargus for 3-6 min this process will extract some asparagus flavour in to the water.
  4. Take the aspargus out and let the water cool down
  5. Then fill the pouch full of mushrooms with the aspargus water and seal the pouch.
  6. Put the sealed pouch for 1 hour in to the sous vide.
  7. After one hour, you will have a intense mushroom flavoured broth and nice crunchy mushrooms which can be used for further cooking
