
Beef Spinach Wrap with Mint Yogurt and Dukkah

Ingredients
- Eye Fillet
- 1 cup Greek Yogurt
- 2 Tps Honey
- Rocket Salad
- 2- 4 Tomatoes
- 1 Spring Onion
- Red Onion
- Juice of a half a Lemon
- Bunch of Fresh Mint
- 2 - 4 Spinach and Herb Wrap
- Olive Oil
- 1 Garlic
- Dukkah
- Salt
- Pepper
Instructions
- Pour some Olive oil in a non sticking pan fry and put the eye fillet which is previously seasoned with salt and pepper. Turn the steak every 15- 20 sec to get it nicely cooked through and let it rest for 10 - 15 min
- Chop the mint leaves in to fine pits and mince the garlic - place everything in a bowl and mix with Greek Yogurt and honey.. Add some lemon juice, season to taste with salt and pepper and set aside for 10 min
- Slice tomatoes, red onions and spring onions in to slices or quarters
- Once the beef is rested slice the beef in short cuts and put on the heated wraps, top with tomatoes, spring onions and red onions. Pour the yoghurt over the beef and vegetables and sprinkle with Dukkah spices and top of it with rocket salad
- Wrap it all together and enjoy a quick and healthy light dinner/snack!
