
Chorizo Pasta with Fresh Basil

Ingredients
- 1 large red onion
- 1 Spanish Corizo
- 1 Bunch fresh basil
- Parmesan cheese
- Splash of olive oil
- 1 Red birds chilli
- 1 Pinch of Oregano
- 1 Can of whole tomatoes
- 1/2 bag of Rigoletto pasta
- 1/2 cup redwine
- 1 clove of garlic finely chopped
- Salt and Pepper to taste
Instructions
- Heat a large enough pot with salted water to boiling point and drop the pasta in to the boiling water and stir frequently to avoid pasta to stick together
- Cut the onions in to quarters and start sweating them over medium heat in a pan fry
- Cut the Chorizo in to half slices and fry with the onion
- Add the can of tomatoes and squeeze tomatoes with a wooden spoon
- Add the redwine and simmer for few min.
- Now add the oregano, chili, garlic, and cook for further 2 min
- Drain the pasta from the water and toss with the sauce and mix well keep simmering whilst infusing the pasta with the sauce
- Server with fresh chopped basil leaves and Parmesan
